Muthiya – Another one from the Gujarati stable that works as a single item meal for the evenings.

1 Cup wheat flour
1/2 cup sooji (rava)
1 tbsp ginger chilli paste
1/4 tsp turmeric powder
1 tsp sugar (this can be avoided)
2 tbsp oil
1/4 cup sour curd
1 cup grated dudhi or chopped fenugreek leaves (methi)
1/4 tbsp of mustard & sesame seeds
Salt as per taste

1) Mix flour, masala, oil and dahi
2) Add dudhi or fenugreek leaves to it and prepare the dough like for parathas
3) Make 1″ thick rolls out of it and steam it in a steamer (Dhokla vessel/cooker works)
4) Check with point of knife, if it does not stick then it is ready
5) Cut the rolls into round pieces and temper it with oil, mustard and sesame seeds

Serve hot with green or kairi chutney.

This recipe is used at our house and has been dictated by my mother. No debates or arguments would be entertained in terms of preparing this some other way. Please feel free to prepare the way you are comfortable
